There is a fundamental challenge with Japan: as wonderful as it is, it doesn't give itself easily. You need to prepare thoroughly and gather information if you don’t want to miss out on the best experiences. It’s not enough to watch short videos from influencers on TikTok and other social media, where they mostly copy each other and recommend the same (touristy) spots—places that offer just the right level of craziness to grab attention.

Yes, that’s also Japan, but it’s not the essence of Japan. The country is full of truly hidden gems — places that aren’t particularly tourist-friendly or easily accessible but, in return, offer authenticity, excitement, and genuine surprises. Here, despite the futuristic surroundings, centuries-old traditions live on. Or, in some cases, just decades-old traditions — but cultivated with such dedication, depth, humility, and work ethic that even 20–30 years of effort can accumulate a richness comparable to centuries of heritage.

For me, this is the true Japan—the most fantastic kind of culture shock. It’s where a bowl of ramen isn’t declared perfect after just three weeks of experimenting, but instead, a master craftsman, a shokunin, refines the recipe every single day, striving to make it better than the day before. This relentless dedication is what makes these artisans so admirable—and, not least, what makes their creations unbelievably delicious.

I’ve gathered these places here for subscribers—spots where, beyond rainbow waffles and panda-shaped milk foam, something truly unique and valuable has been created. And I’m sharing plenty of tips and tricks on how to get into these places because the truly exceptional spots are highly popular among locals as well. That’s why timing, determination, and careful planning are essential.
