When it comes to Copenhagen's restaurants, obviously everyone’s (myself included) first thought is Noma, the restaurant that started the entire New Nordic movement and has been raising the country's standards for 20 years. They have also successfully proven the idea that the top tier will elevate the entire hospitality industry: today, the city is full of fantastic places, not just in the Michelin-star category. For example, my favorite burger in the world is here, and when it comes to pizza, bakeries, and cafes, they are also doing things that propel the city into the world’s very top .

Almost exactly 10 years ago I managed to break into the defense lines of the top Northern restaurants and my first stop was a place called Kadeau. It immediately became clear that these places have something truly relevant and authentic; it wasn’t some PR idea to try a funny and unique style, but rather they were radically transforming the world of gastronomy. At that time, Copenhagen wasn’t really a gastronomic city yet, mostly boasting the fact that they had the best restaurant in the world and delicious open-faced sandwiches (smørrebrød). (Geranium already existed by then; Rasmus Kofoed won the Bocuse d'Or in 2011, but they didn’t get their third star until 2016.) Since then, I’ve lost count of how many times I’ve been to the Danish capital, but I do know that I’ve been to Noma about 30 times and of course, I’ve thoroughly eaten my way through the entire city’s offerings many times. I’m also constantly hunting for newly opened good places, of which there are plenty, so – as usual – I’ve put together a well-founded, thoroughly tested, carefully curated #unmissable list for subscribers. It includes all the essential spots, and nothing that isn’t indispensable, so there’s no need to worry about missing out on any place that’s important to visit.
