Sacred Fire, Elegant Plate: A New Era for Indian Cuisine
It was a long time coming, but now it is finally "official": Indian cuisine, with its amazing cultural heritage, has its place at the forefront of modern fine dining!
While the whole world (myself included) is following the every twist and turn of Japanese gastronomy, much less attention is paid to other Asian cuisines with traditions as rich as those of, say, India or even China (I mean regional cuisines), both have similarly chiselled and infinitely rich heritages, and alongside the traditional restaurants, there are now places that are doing justice to them, creating vibrant, contemporary, internationally significant restaurants.
I also tried 3 of the most glamorous modern Indian restaurants that have gone in completely different directions, but they all have one thing in common: they are well worth a trip on their own, they represent such exciting gastronomy!
I've been wanting to work on this for a long time, I've been to India twice in the last few months, but as you'll see, it's not really necessary to go there!
